Seared Steelhead Trout with Roasted Red Potatoes, Grilled Asparagus and Romesco Sauce
A seafood watch best choice, steelhead trout is very similar to salmon in color, taste, and texture. We simply season the skinless filets with a little salt and pepper and then sear them in olive oil. We serve them with spice roasted skin on red potatoes and grilled asparagus pieces. Our gluten free Romesco sauce is composed of pureed roasted red bell peppers, tomatoes, toasted nuts and dried chilies. A delicious accompaniment to the flavors of this dish. (Please note: A medium order comes with one 6 oz filet and a large order comes with one 9 oz filet, pre-cooked weight)
