Herb Roasted Shrimp with Spinach & Mushroom Quinoa Pilaf
We toss our plump shrimp with herbs, garlic, and a touch of olive oil and roast them until just cooked. Served over a bed of flavor and vegetable packed quinoa pilaf. The pilaf is heavy on the veg, with a nutritious mix of garlic sauteed spinach, mushrooms, red bell peppers, and other aromatics.
