Herb Roasted Shrimp with Roasted Red Potatoes, Grilled Asparagus and Romesco Sauce
We toss our plump shrimp with herbs, garlic, and a touch of olive oil and roast them until just cooked. We serve them with spice roasted skin on red potatoes and grilled asparagus pieces. Our gluten free Romesco sauce is composed of pureed roasted red bell peppers, tomatoes, toasted nuts and dried chilies. A delicious accompaniment to the flavors of this dish.
