Seared Wild Salmon over Cauliflower “Risotto” with Sautéed Garlic Spinach and Mushrooms
Wild salmon filets are simply seasoned with salt and pepper and seared. Our cauliflower “risotto” is made with coconut milk and a small amount of nutritional yeast to mimic the earthy parmesan flavors of this dish. The “risotto” is mixed with sauteed garlic spinach and sliced mushrooms to round out this hearty and vegetable packed meal.
