Seared Pork Tenderloin over Cauliflower “Risotto” with Sautéed Garlic Spinach and Mushrooms
Pork tenderloin is marinated with herbs, garlic, and a touch of olive oil and then seared medium. Our cauliflower “risotto” is made with coconut milk and a small amount of nutritional yeast to mimic the earthy parmesan flavors of this dish. The “risotto” is mixed with sauteed garlic spinach and sliced mushrooms to round out this hearty and vegetable packed meal.
