Pork Schnitzel with Braised Red Cabbage & Green Apples
Lean pork tenderloins are cut into medallions and pounded thin for our take on this traditional German dish. We then dredge them in cage free eggs and toss them with a seasoned gluten free coconut and potato starch breading. Finally they are pan fried until golden crisp in a cast iron skillet. Served with a side of tender braised red cabbage and tart green apples that have been lightly sweetened with fresh dates. A delicious contrast in flavors and textures perfect for a cold winter night.
