Herb Roasted Shrimp over Cauliflower “Risotto” with Sautéed Garlic Spinach and Mushrooms
We toss our plump shrimp with herbs, garlic, and a touch of olive oil and roast them until just cooked. Our cauliflower “risotto” is made with coconut milk and a small amount of nutritional yeast to mimic the earthy parmesan flavors of this dish. The “risotto” is mixed with sauteed garlic spinach and sliced mushrooms to round out this hearty and vegetable packed meal.
