Herb Roasted Shrimp over Broccoli and Potato “Cheese” Casserole
We toss our plump shrimp with herbs, garlic, and a touch of olive oil and roast them until just cooked. Tender broccoli and roasted sweet potatoes are tossed with our vegan “cheese” sauce made with cashews, coconut milk, butternut squash and nutritional yeast. Hearty, healthy and satisfying.
