Chicken Piccata with Spaghetti Squash
Locally raised Red Bird chicken is pounded thin and quickly sauteed with a light coating of seasoned potato starch and coconut flour. We serve it over a bed of roasted spaghetti squash and a side of bright piccata sauce made with clarified butter, capers, lemons, and our homemade chicken bone broth. A gluten free version of the delightful Italian American classic.
