Locally raised Red Bird chicken is pounded thin and quickly sauteed with a light coating of seasoned potato starch and coconut. We serve it with a cup of bright piccata sauce made with clarified butter, capers, lemons, and our homemade chicken bone broth. A gluten free version of the delightful Italian American classic.
